Came up with this last minute combination based on what was in the fridge. Turned out freaking fantastic!
Servings: 2 (if eating as a main dish, serves 4 as a side dish)
- 4 cups Greens: lettuce/arugula/spinach…etc.
- 1/2 cup smoked salmon (or trout), sliced
- 1 cup cucumbers, cubed
- 1 cup cherry tomatoes, sliced in halves
- Sesame Kewpie dressing to taste – ~1/4 cup?
- Pepper to taste
- Combine all the ingredients together and mix! Easy.
