Balsamic Blueberry Grilled Cheese

Servings: 2 sandwiches

Ingredients:

  • 1 cup blueberries (fresh or thawed if frozen)
  • 3 Tbsp brown sugar
  • 2 Tbsp balsamic vinegar
  • 4 slices of bread (I used sourdough)
  • Butter (for spreading)
  • Plenty of white cheese (ie. Havarti, Mozzarella, Monterey, Swiss, Sharp White Cheddar…etc.)
  • Handful of baby spinach leaves, washed

Directions:

  1. In a small saucepan, combine the blueberries, brown sugar and balsamic vinegar. On medium heat, let the mixture come to a slow boil and crush the berries as you stir. After ~5mins, strain the berries (you can reserve the juice for other recipes if you like).
  2. Spread butter on one side of each piece of bread.
  3. Assemble your sandwich by placing ingredients on the unbuttered side of the bread: spread blueberries on bread, top with cheese, spinach and more cheese. Sprinkle some fresh ground pepper. Top with other piece of bread (butter facing outside).
  4. Toast your sandwich with either a sandwich maker or on a pan over medium heat until the outside of the sandwich is golden brown and the cheese inside has melted. Enjoy!
