Servings: enough filling for 7 large puff pastry squares. Quadruple the recipe if you’re going to make it in a casserole dish (as per original recipe).
Ingredients:
- 1 cup (~100g) cooked well-drained spinach (you can use either frozen thawed or blanch fresh spinach for 1min)
- 1 cup parsley, finely chopped without stems
- 1/2 cup (~1 small) yellow onion, finely chopped
- 1 clove garlic, minced
- 1/2 Tbsp extra virgin olive oil
- 1 egg
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese, drained
- 1/4 tsp dried dill weed
- Freshly-ground black pepper
Directions:
- Combined all of the ingredients above. Done. Fill it inside whatever you like – traditionally used with phyllo dough, but I like to stuff it inside some puff pastry squares with egg wash and bake for about 7-10mins. Mmmmm
