Spanakopita Filling

Servings: enough filling for 7 large puff pastry squares. Quadruple the recipe if you’re going to make it in a casserole dish (as per original recipe).

Ingredients:

  • 1 cup (~100g) cooked well-drained spinach (you can use either frozen thawed or blanch fresh spinach for 1min)
  • 1 cup parsley, finely chopped without stems
  • 1/2 cup (~1 small) yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 Tbsp extra virgin olive oil
  • 1 egg
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese, drained
  • 1/4 tsp dried dill weed
  • Freshly-ground black pepper

Directions:

  1. Combined all of the ingredients above. Done. Fill it inside whatever you like – traditionally used with phyllo dough, but I like to stuff it inside some puff pastry squares with egg wash and bake for about 7-10mins. Mmmmm
