I attempted Tony’s vermicelli noodle recipe but only really liked the sauce for the marinade! So now I just make the marinade on rice or salad and it is FANTASTIC!

Ingredients
- 600 – 800g / 1.2 – 1.6lb chicken thigh or breast
- Sauce
- 5 garlic cloves , finely chopped or minced
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tbsp soy sauce (all purpose or light)
- 1 tbsp vegetable oil
1 stalk lemongrass , white part only

- mix sauce ingredients and marinate the chicken for at least 1 hour
- cook the chicken and remove off the frying pan
- boil the sauce until it is a thick consistency
