Tony’s chicken marinade

I attempted Tony’s vermicelli noodle recipe but only really liked the sauce for the marinade! So now I just make the marinade on rice or salad and it is FANTASTIC!

Recipe adapted:

serving: 4


  • 600 – 800g / 1.2 – 1.6lb chicken thigh or breast
  • Sauce
    • 5 garlic cloves , finely chopped or minced
    • 2 tbsp brown sugar
    • 2 tbsp lime juice
    • 1 tbsp fish sauce
    • 1 tbsp soy sauce (all purpose or light)
    • 1 tbsp vegetable oil
      1 stalk lemongrass , white part only


    1. mix sauce ingredients and marinate the chicken for at least 1 hour
    2. cook the chicken and remove off the frying pan
    3. boil the sauce until it is a thick consistency
