Taiwanese Cold Noodles (涼麵)

Servings: 2

Ingredients:

  • Noodles (any kind you like)
  • Half a cucumber, julienned
  • 1 carrot, julienned
  • Sauce:
    • 3 Tbsp peanut butter
    • 1 Tbsp soy sauce
    • 1 tsp garlic, minced
    • 1 tsp sugar
    • 1 tsp black vinegar
    • 1/2 tsp sesame oil
    • 3 Tbsp warm water

Directions:

  1. Cook noodles, strain and toss in a bowl of ice cubes (this makes the noodles Q). Once noodles are cold, separate from ice cubes and set aside.
  2. Make the sauce by adding all the sauce ingredients together (add the warm water last after you’ve mixed everything else together). Set aside.
  3. Assemble your noodles by adding cucumber and carrots to the noodles and pouring the peanut sauce over. Enjoy!

Note:

  • For some extra protein, you can add some shredded boiled chicken to it or ham.
