Ingredients:
- Noodles (any kind you like)
- Half a cucumber, julienned
- 1 carrot, julienned
- Sauce:
- 3 Tbsp peanut butter
- 1 Tbsp soy sauce
- 1 tsp garlic, minced
- 1 tsp sugar
- 1 tsp black vinegar
- 1/2 tsp sesame oil
- 3 Tbsp warm water
Directions:
- Cook noodles, strain and toss in a bowl of ice cubes (this makes the noodles Q). Once noodles are cold, separate from ice cubes and set aside.
- Make the sauce by adding all the sauce ingredients together (add the warm water last after you’ve mixed everything else together). Set aside.
- Assemble your noodles by adding cucumber and carrots to the noodles and pouring the peanut sauce over. Enjoy!
Note:
- For some extra protein, you can add some shredded boiled chicken to it or ham.
