Jee’s Potato Curry

This recipe was given to me on our desexing rotation at Lost Dogs Home by our Sri Lankan surgeon, Jee. I haven’t tried it yet, but everything he has made us has been absolutely amazing so I’ll trust that this will be great too.

Ingredients:

  • 500g potatoes, chopped
  • 1 large onion
  • 3 cloves garlic, minced
  • 1/2 tsp turmeric powder
  • 1/2 tsp paprika
  • 1 tsp curry powder
  • 2 sprigs curry leaves
  • 3-4 cardamom pods
  • 2 cinnamon stocks
  • 10 fenugreek seeds
  • 400mL coconut milk

Directions:

  1. Add everything except the coconut milk into one pot and boil with “some: water until the potato is almost cooked.
  2. Add coconut milk and boil until the potato is cooked.
  3. Serve over rice or couscous or naan or roti.
