This recipe was given to me on our desexing rotation at Lost Dogs Home by our Sri Lankan surgeon, Jee. I haven’t tried it yet, but everything he has made us has been absolutely amazing so I’ll trust that this will be great too.
Ingredients:
- 500g potatoes, chopped
- 1 large onion
- 3 cloves garlic, minced
- 1/2 tsp turmeric powder
- 1/2 tsp paprika
- 1 tsp curry powder
- 2 sprigs curry leaves
- 3-4 cardamom pods
- 2 cinnamon stocks
- 10 fenugreek seeds
- 400mL coconut milk
Directions:
- Add everything except the coconut milk into one pot and boil with “some: water until the potato is almost cooked.
- Add coconut milk and boil until the potato is cooked.
- Serve over rice or couscous or naan or roti.
