This recipe was given to me on our desexing rotation at Lost Dogs Home by our Sri Lankan surgeon, Jee. I haven’t tried it yet, but everything he has made us has been absolutely amazing so I’ll trust that this will be great too.
- 5-6 cardamom seeds
- 1-2 cinnamon sticks
- 3 sprigs of fresh curry leaves
- 5 fenugreek seeds
- 5-6 cloves
- 50g cumin seed
- 30g coriander seed
- 10g fennel seed
- Dry toast the cardamom seeds, cinnamon sticks, curry leaves, fenugreek seeds and cloves on a pan over medium heat.
- Add cumin seed, coriander seed, and fennel seed into the pan and toast together. Turn off the heat when curry leaves are dry.
- Turn off heat and grind everything together into a powder.
