Servings: 6
Ingredients:
- 1 medium onion, sliced
- 2 cloves of garlic, minced
- 2 Tbsps olive oil
- 1 & 1/3 Tbsp curry powder
- 4 cups (1L) chicken stock
- 2 cups quinoa/couscous
- 1.5 cups craisins/raisins
Directions:
- In a pan, sautée the onion and garlic in the olive oil on medium heat.
- Add curry powder to the pan and stir around a little until mixed.
- Add the chicken stock and put your lid on. Once it boils, add in quinoa and craisins/raisins. Stir. Put the lid back on and turn the heat on low and simmer for 10 minutes until it looks nearly ready (slightly liquid-y still).
- Turn off heat and let the couscous/quinoa steam with the lid on for about 10mins. Then fluff up with a fork. Ready to eat!
Notes:
- You can try adding a little paprika or poultry seasoning for more flavour.
- Try adding a little shredded chicken for extra protein
