Curry Quinoa/Couscous with Craisins

So easy and healthy! Full of flavour. 🙂

Servings: 6

Ingredients:

  • 1 medium onion, sliced
  • 2 cloves of garlic, minced
  • 2 Tbsps olive oil
  • 1 & 1/3 Tbsp  curry powder
  • 4 cups (1L) chicken stock
  • 2 cups quinoa/couscous
  • 1.5 cups craisins/raisins

Directions:

  1. In a pan, sautée the onion and garlic in the olive oil on medium heat.
  2. Add curry powder to the pan and stir around a little until mixed.
  3. Add the chicken stock and put your lid on. Once it boils, add in quinoa and craisins/raisins. Stir. Put the lid back on and turn the heat on low and simmer for 10 minutes until it looks nearly ready (slightly liquid-y still).
  4. Turn off heat and let the couscous/quinoa steam with the lid on for about 10mins. Then fluff up with a fork. Ready to eat!

Notes:

  • You can try adding a little paprika or poultry seasoning for more flavour.
  • Try adding a little shredded chicken for extra protein
