Ingredients:
- 1lb/500g chicken breast, cubed
- 2 Tbsps soy sauce
- 2 Tbsps mirin
- 2 Tbsps sake
- 1/2 tsp dashi
- 1/2 tsp crushed ginger
- 1/2 tsp crushed garlic
- Tapioca flour or corn starch (as needed)
- Vegetable oil
- Wasabi mayo: 1:1 ratio of ready wasabi and kewpie mayo
Directions:
- Marinate chicken overnight in everything (except the flour): soy sauce, mirin, sake, dashi, ginger and garlic.
- Pat chicken dry & coat with tapioca flour or corn starch.
- Fry in oil in a shallow pan or wok until done.
- Serve with wasabi mayo (1 ready wasabi : 1 kewpie mayo).
