Justin’s Japanese-Style Fried Chicken


  • 1lb/500g chicken breast, cubed
  • 2 Tbsps soy sauce
  • 2 Tbsps mirin
  • 2 Tbsps sake
  • 1/2 tsp dashi
  • 1/2 tsp crushed ginger
  • 1/2 tsp crushed garlic
  • Tapioca flour or corn starch (as needed)
  • Vegetable oil
  • Wasabi mayo: 1:1 ratio of ready wasabi and kewpie mayo


  1. Marinate chicken overnight in everything (except the flour): soy sauce, mirin, sake, dashi, ginger and garlic.
  2. Pat chicken dry & coat with tapioca flour or corn starch.
  3. Fry in oil in a shallow pan or wok until done.
  4. Serve with wasabi mayo (1 ready wasabi : 1 kewpie mayo).
