Banana Muffins

This recipe came to me from Anita during a procrasti-baking session. They came out so deliciously moist and packed full of bananas. They were amazing!

Makes: 12

Ingredients:

  • 1.5 cups plain flour
  • 1/3 cup sugar
  • 1 tsp baking soda
  • 1.5 tsp salt
  • 1 tsp ground cinnamon
  • 5 bananas, ripe mashed
  • 1/2 cup olive oil
  • 1 tsp vanilla essence
  • 1/4 cup honey
  • (1/2 cup chopped walnuts – optional)

Directions:

  1. Preheat the oven to 180˚C (~350F) and line a muffin pan with cups or squares of parchment paper.
  2. Mix the dry ingredients together in a bowl: flour, sugar, baking soda, salt, cinnamon.
  3. In a separate bowl, combine the wet ingredients: mashed bananas, olive oil, vanilla and honey.
  4. Mix the dry and the wet ingredients together (and add in walnuts – optional). Pour mixture into muffin pan.
  5. Bake for about 20-25mins (test by inserting toothpick into the centre and if it comes out clean, it’s ready. Note: if you stick it into the centre of a chunk of banana, it will still look wet, so poke a few cupcakes to be sure!)
