**UNPUBLISHED**(Haven’t tried it yet) This recipe is from my friend Anita who so kindly invited me over for dinner the other day. Her inspiration came from the China Bar buffet where they served something similar and she decided to recreate it. I like to call them “eggplant steaks” because she cut the eggplant into such huge slices that I ate it with a fork and knife, like a steak.
Servings: 4
Ingredients:
- 2 Eggplants
- 2Tbsp olive oil
- 1/4 cup Chinese cooking wine
- 2 Tbsp sweet soy sauce
- 2 Tbsp soy sauce/Maggie’s soy sauce
- 1/4 cup sweet chilli sauce
Directions:
- Cut eggplants into large slices (like eggplant steaks).
- Add all the ingredients into a pan (eggplants first) on medium high heat over some olive oil.
- Flip the eggplants over occasionally, ensuring none of the sauce sticks to the pan. It’s done with both sides are browned (you can cook it longer if you prefer your eggplants to be more cooked).
